Ever Wonder Whose Job It Is To Come Up With The Next Best Ben & Jerry's Flavor? It's This Guy.

"I do make the best ice cream in the world. There's no doubt about it."

Peanut Butter Half Baked. Brownie Batter Core. Chocolate Therapy. Coconut Seven Layer Bar. What do all of these Ben & Jerry's ice cream flavors have in common? They were all thought up by Eric Fredette. 

Fredette is one of only six Flavor Gurus at Ben & Jerry's ice cream factory. And if you're a big fan of desserts, his job sounds like a dream come true. 

He spends his days coming up with new flavor ideas and then mixing, chopping, whipping, and tasting them until they're as good as he imagined. Whether it's white fudge-covered caramel popcorn, potato chips, or fudge covered rum and malt balls, no ingredients are off limits for the Flavor Gurus at Ben & Jerry's. 

In a video for Thrillist's web series Job Goals, Fredette describes how he got the job, what his first day was like, and how much he's enjoyed it ever since

"I remember my first ice cream project when I first started," he said in the video. "First day, the director comes out and is like, 'We're going to start a line of low-fat ice creams and you're going to make those happen.' It was epic. It was so much fun for me and it's pretty much been the same for the next 21 years." 


He revealed that he's loved cooking from a young age because he comes from a large family. He's one of eight children, so meals for 10 needed to be made every day. 

"I started cooking very early," he said. "I guess I was encouraged almost to play with my food. I feel the things that I liked as a child I still love because they're nostalgic. They bring back good memories. It evokes an emotional response usually."

Unfortunately, Fredette's family doesn't get clued in on the new flavors he's dreaming up at Ben & Jerry's. 

"I don't tell people what I'm working on — I don't even tell my wife what I'm working on cause she's been known to spill the beans at gatherings," he jokes. "I bring home all the new stuff and it's a surprise when I bring it home, so it's much better that way." 

So, does Fredette really love what he does as much as we imagine he would? Well, the answer is in the pint. 

"You can tell if someone really loves what they do by what they produce," he said. "No matter what it is — drawing, art, just anything — if you love it, you can tell by the finished product."
